Locro (Argentina)

Red Lentil Soup (Turkey)

The first time I tried this was at a small restaurant in Istanbul, and it was love at first bite. Every time I make this healthy soup at home, I’m transported back to my time in Istanbul.

Besides making me nostalgic, this soup is a great starter or main meal depending on the portion and surprisingly easy to make. If you want to quicken the process, soak your lentils overnight in water.

It will significantly shorten your cooking time. This soup can also easily be made vegan by using vegetable stock instead of chicken. Here is a great Turkish red lentil soup recipe to try. 

Pho Ga (Vietnam)
